Food and Agro-Industrial Wastes: Sustainable Impacts, Transformation and Added Value of By-Products offers an in-depth look at the potential of recycling food and agro-industrial waste into valuable products. This book presents the concept of sustainable development through responsible consumption and production, and introduces practical methods to transform waste into new, value-added products. It delves into various industries, such as meat, dairy, and crop processing, highlighting the ways in which residues like leaves, stems, and husks can be repurposed. Moreover, the book explores the valorization and safety of fruit and vegetable waste, including peels and skins, to enhance food products.

Real-life case studies showcase how bioactive compounds, nutraceuticals, and other bio-based enzymes can be derived from waste, providing insights into innovative food product development. This comprehensive guide is an essential resource for anyone interested in sustainable waste management and the creation of functional, eco-friendly products. Globally, it is estimated 1.3 billion tons of food, valued at $1 trillion is wasted a year, according to the United Nations and the Food and Agriculture Organization. (FAO) In addition, billions of tons of agro-industrial waste from agriculture and food processing activities are generated yearly, putting a strain on natural resources, and negatively effecting the environment.

Mika Sillanpää’s research work centers on chemical treatment in environmental engineering and environmental monitoring and analysis. The recent research focus has been on the resource recovery from waste streams. Sillanpää received his M.Sc. (Eng.) and D.Sc. (Eng.) degrees from the Aalto University where he also completed an MBA degree in 2013. Since 2000, he has been a full professor/adjunct professor at the University of Oulu, the University of Eastern Finland, the LUT University, the University of Eastern Finland and the University of Johannesburg. Moharana Choudhury is a researcher and environmentalist from Guwahati, Assam, India. He has completed his education as an M Sc, PGDGIS, PGDEM, and PGCGARD from Gurukul Kangri Deemed to be University, Haridwar, Uttrakhand, North Eastern Hill University, Shillong Meghalaya, Tezpur University, Assam, and NIRD Hyderabad, respectively. Choudhury has worked on various scientific projects in various Government departments and has more than 10 years of research and working experience in the field of environment. He began his career as a research intern at the National Institute of Disaster Management in New Delhi, followed by the North Eastern Space Application Center (Department of Space, Government of India) as a Junior Research Fellow. Choudhury has authored or edited books with internationally reputed publication houses and more than 30 articles in national and internationally reputed journals, proceedings, and more than 20 book chapters. He has written many articles and scientific reports in popular magazines; He is working now as an editor of various renowned publishing houses. Choudhury is working on various environmental conservation activities in Assam and the country. He has worked on several initiatives to integrate environmentally sustainable projects for iconic heritage places, wetlands, and ecotourism spots in Assam, India, especially for cleanliness and beating single‐use plastic pollution missions. He contributes to various environmental research, management, social media mass awareness, and research studies. He is also well known in India for his efforts to implement environmental education and safeguard the privileges of environmental degree holders in India. Srijan Goswami is a research coordinator at the Biomedical Research and Allied Sciences Division of Voice of Environment (VoE), in Assam, India. He has authored and edited several Environmental Sciences and Public Health Books (PG-Research category) and is currently pursuing Ph.D. in Biotechnology at the University of North Bengal. Dr. Goswami has around 11 years of experience in the field of teaching and research, and has published four books, and over 40 research papers in national and international journals. His research focuses on environment-public health connections, extraction and characterization of bioactive compounds from food wastes, nutrition nanobiotechnology, nutraceuticals, and functional foods.
