For each title, the full bibliographic citation is accompanied by a summary of the table of contents and a description of other features such as a glossary of terms, cooking equipment, list of ingredient suppliers or various appendixes. Only English-language titles, most published in the United States, were chosen in order to facilitate the research process for people interested in studying and cooking dishes of various ethnic groups.

Vladimir F. Wertsman, formerly Senior Librarian at NYPL's Mid-Manhattan Library Job Information Center, is Chair of the Publishers and Multicultural Materials Committee of Ethnic Materials Information Exchange Round Table, American Library Association. He is the author of New York: The City in Over 500 Memorable Quotations (Scarecrow, 1997), and Career Opportunities for Bilinguals and Multilinguals (Scarecrow, 1994).
