After the pause, the phrase is repeated at normal speed. Not only does this attune the ear as to what to expect in Greece, it also gives the listener something to aim for. As confidence and fluency increase, listeners can have fun trying to say the phrase the second time along with the native speaker and get a feel for the rhythm of the language which they might not be familiar with.
