The Caribbean Association of Home Economists (CAHE) was founded in 1972. This book was originated by the Research Committee of the CAHE, which set itself the task of producing a booklet of experimental cooking from across the region. Over the years, interest grew and the result is now much more than a recipe book, giving an enticing glimpse of the foods and flavourings that contribute to the "romance" of Caribbean cuisine.
