It is therefore very important to know what makes each knife different, how to use it and how to look after it. This cookbook contains 50 wide-ranging recipes that require a different cutting technique each time - from Carpaccio of tuna with citrus and coriander; Duck breast with autumn vegetables; Rosemary Casserole with rosemary and vitelotte potatoes, Goats cheese and cucumber parfait, Mango pie and vanilla cream.
Didier Mouche aka "Marius" has long been a cook. He sharpened his knives himself and one day he decided to change his job. During three weeks of training, Marius was trained at the FCTV center in Beaumarches (the only existing training on sharpening techniques in France), various sharpening techniques, various shapes, different types of blades, the different grain stones and the different machines. Marius is an atypical character with a "vintage" look with a beard of three days, which circulates at the wheel of an old taxi. Working for both professionals and individuals, Marius now sharpens all sorts of knives, scissors and blades on the spot, at the address indicated when making an appointment. The sharpening is done minute aboard Marius' retro taxi. It is with the help of his father that Marius adapted to the back of his arrival of water and electricity which makes him totally independent on the public road. Marius is today the sharpener of 587 different places including restaurateurs, butchers, fishmongers, actor Gerard Depardieu, and many other craftsmen who use knives and scissors of all kinds.
