ROY HAYTER has over 15 years' experience of writing and developing books and training material for the hospitality industry, including the lead texts for catering college students, trainee chefs, bar, housekeeping and restaurant staff. Roy is a graduate of the Scottish Hotel School, and native of Zimbabwe. With his partner, he owns and runs a 9 bedroom hotel in a small market town in mid-Wales. From barely reaching the minimum criteria for tourist board listing in 1992, the hotel now has two stars, and welcomes returning guests from far and wide.HELEN LINES has played a key role in reviewing the occupational standards which underpin the National and Scottish Vocational Qualifications for the hospitality industry. This work is part of the remit of the Hospitality Training Foundation (HtF) in its government-appointed status of National Training Foundation. Through her work with HtF Helen has consulted with a large number of hospitality organisations and developed an understanding of their business needs.
