Consumers' search for food quality is becoming an increasingly topical issue. This book aims to inform readers about the dangers of fungi and mycotoxins in food, focusing mainly on cereals: corn and rice. We seek to inform readers about the main fungi and mycotoxins found in these cereals, the dangers of ingesting them, and some suggestions for preventing contamination of these foods while still in the field.
Veterinary Doctor graduated from the Federal University of Piauí (UFPI), with a PhD in Animal Science from UFPI. He is currently a State Agricultural Inspector at the Agricultural Defence Agency of the State of Ceará. Veterinary doctor with a post-doctorate from the Federal Rural University of Rio de Janeiro (UFRRJ). Currently a full professor at UFPI.
