The book is intended to be used by both students and experts in the covered fields. It consists of an updated view, as far as anticancer or antibacterial activities are concerned, of onions. It also approaches the bacterial toxins as important actors of syndromes and disease in humans, as well as the description in an updated fashion, of a new form of fighting the microbial infections, such as pyroptosis. The book goes then into the several ways that we have to render the microbial pathogens susceptible to antimicrobials, as well as new possibilities to overcome the development of resistances to new antibiotics. The main objective of this book is to provide both a background and an update on some critical areas of microbiology currently affecting our health and welfare. The book contains enough classical and new materials in different fields of Microbiology (including viruses), food-caused allergies, resistance to antimicrobials, and how to cope with them.

T.G. Villa has a Bachelor of Sciences (Biology) from the University of Salamanca, Spain, in 1971, a degree in Biology and PhD in Microbiology in 1973 and 1976, respectively, and a postdoctoral position at the University of California at Davis (USA) from September 1976 to September 1978. From May 1983 to August 2020, he was full Professor of Microbiology at the Faculty of Pharmacy-University of Santiago de Compostela (Spain). He is today an Emeritus Professor at the University of Santiago de Compostela, Spain, until 2025. Ana Gonzalez-Abril has a Bachelor of Sciences (Biology) at the University of Vigo, Spain (2012), and a Master's Degree in Biotechnology in 2014. She received her international Ph.D. in Biology with Honors at the Santiago de Compostela University, Spain (2019). She is currently working at the Department of Food Technology from IIM-CSIC, the Department of Microbiology from Santiago de Compostela University, Spain.
