This book includes microbiological analyses carried out on various foods sold by street vendors in the informal market of São Luís, Maranhão. Eating away from home has become a constant habit in today's society and even socio-culturally. The data described reveals the microbiological risks that consumers are subjected to when eating away from home, due to inadequate food handling, lack of application of Good Manufacturing Practices, use of contaminated water and lack of infrastructure at the points where food is sold.
She has a degree in Industrial Chemistry from the Federal University of Maranhão (1980), a master's degree in Food Technology from the Federal University of Ceará (1996) and a PhD in Food Sciences from the Federal University of Lavras (2004). She is currently Associate Professor III in the Department of Chemical Technology at UFMA.
