This is a black and white reissue edition of Caribbean Modern, previously published as a full-colour cookbook in 2015. This edition contains no photography.
When you think of the Caribbean, a hundred beautiful clichés come to mind - white sand, blue sky, salty breezes and balmy nights. But what of the food? Eating is at the heart of Caribbean life: people come together in the kitchen, someone starts cooking and soon there is laughter, music and fantastic food.
Shivi Ramoutar grew up in Trinidad, Leicester and London. As a supper club host and pop-up chef, Shivi turned to her favourite Caribbean dishes for inspiration. Her recipes are a wonderful melting pot of flavours: traditional Coconut Chicken Rundown sits alongside Red Bean and Spinach Mac 'n' Cheese and Baked Eggs Creole. Her food is fresh and zingy, exciting and exotic, but also satisfyingly homely and hearty. And not forgetting fun - Salted Tamarind Caramel Sundae, Smashed Banana Pancakes and Peanut Butter and Jelly Cheesecake - without which the book just wouldn't be Caribbean.
Many moons ago, Shivi was born in Trinidad into a colourful (in all senses of the word) family, and she was brought up between those beloved salty beaches, the grassy Leicestershire countryside (via a brief stint in the Big Apple) and the eclectic buzz of London, where she has now settled and which she calls 'home'. She left a career in law to pursue her passion for food. Her favourite pastimes are tinkling the ivories (her ambition was once to be a classical pianist), writing songs and tap dancing. She lives with her husband and her three little wildlings in a house of utter chaos. The Guardian dubbed her a 'Caribbean Food Supremo', while British Airways' The Club magazine calls her the 'Queen of Contemporary Caribbean Cooking', and she has shared her unique, fresh and colourful approach to flavoursome Caribbean food across London and the UK, via her supper club and then subsequently through restaurant and brand collaborations, as well as in various national publications. Shivi can regularly be found cooking her tropical fare on TV, appearing on Saturday Kitchen, James Martin's Saturday Mornings, and This Morning, as well as in her own series, Jimmy and Shivi's Farmhouse Breakfast, which airs on Saturday mornings on ITV. Shivi is also a passionate spokesperson for promoting tourism in the Caribbean at Caribbean events for both travel and food publications throughout the UK. https://www.shiviramoutar.com/ Follow Shivi on Instagram @shiviramoutar
