Paul's healthy and nutritious recipes are a reflection of his cultural heritage and wide-ranging influences, and will allow you to make this vibrant and colourful food part of your everyday life.
A heady mix of time-honoured traditions, markets and street food, fine-dining restaurants, expats from Europe and America, and migrant workers from Asia and Africa - this is the Middle East of the 21st century. There has never been a more exciting time to explore the food of the region, and Paul Frangie offers an insider's perspective. His fresh take on traditional ingredients and new interpretations of classic dishes are perfect for sharing. And the simplicity of his recipes means you get to spend less time in the kitchen and more time around the table, without compromising on taste. To wake up jaded palates, try green pea 'falafel' with coriander, or artichoke 'moutabbal' with walnuts and smoked garlic. On warm days, grill some zesty fish kebabs outdoors, and in cooler weather, feast on rich roast duck with date molasses and pomegranate. Then treat everyone to a refreshing frozen yogurt with anise and peaches or a sticky date and saffron cake. Paul's recipes are a reflection of his cultural heritage and wide-ranging influences, given a contemporary twist by his love of healthy and nutritious eating, so that you can make this vibrant, colourful food part of your everyday life.

Chef, television personality and international model PAUL FRANGIE grew up in Dubai, with a Lebanese father and Dutch mother. He trained as a business consultant, but soon left the corporate world behind to pursue his passion for food and travel. After honing his culinary skills at Tante Marie Culinary Academy and then the three-Michelin-starred Restaurant Gordon Ramsay in London, he returned to Dubai in 2011, where he has since gained a reputation as one of the industry's brightest young professionals. Paul hosts his own online food show, This Dude Knows Food, is a regular contributor to magazines such as Harper's Bazaar, Hello, OK, Women's Health, Reveal, Esquire and Closer, and travels the world as a guest chef. He is about to open his first lifestyle venue in Dubai, a unique concept combining healthy food with a bespoke fitness and leisure programme.
